Ed’s (ModelMaker) recent KFC post reminded me I had not done this cook in over a year.

I pounded boneless, skinless thighs flat and then double dredged through flour/egg wash/panko. I won’t double dredge again, less is more....

Cooked indirect on the BGE at about 400* for just under an hour. I blended several different hot sauces and siracha together with a small pad of butter and let it heat slowly. Dunked the chicken in the hot sauce mixture and served with potato salad, broccoli and some blue cheese to cool it down!

Pulled a pack of bone in thighs out of the freezer this morning to get the KFC treatment later this week. Ran across some Lefty's Spicy Fish and Chicken Mix at the base commissary so I'm going to hit them with that.
