Leftover smoked beef ribs, heated and meat removed. Beef Rib Meat Mountain. Low carb tortillas buttered. Tillamook Cheddar. Topped with Guac and Allsups Red. All this is nothing rare nor unusual. Brethren eat beef ribs all the time..However wife doesn't care for beef ribs, except cooked like this. The day I cook and eat beef ribs she will have something else. But shredded, reheated and turned into a taco or quesadilla she good. They are rich.
