Two beef navels, cured for 20 days, in the smoker today. A first try at beef bacon.

Typical cure of pink salt, brown sugar and salt. I've done pastrami out of brisket before.

They're in vacuum sealed bags now, will slice up tomorrow (Sunday) then post pictures.
I did take a few small slices out for quality control, and they were pretty damn good

Beef Bacon is a big thing in places like Malaysia because it's largely a Muslim population. First time I had it, it was at a 5 star hotel for breakfast in KL.

Now I'm wanting to try making some of that. Not sure how big a navel would be. I guess butchers like navel for burger meat?
