I do have a question. How happy were you w/ apple wood smoke on beef ribs?
I ask because I have a cook coming up that I'll be smoking both pork and beef ribs and I'm trying to decide what wood to use. I generally like using a combo of post oak and fruit wood. The post oak does a great job of producing coals and BTUs. I was going to use a combo of cherry and oak because cherry gives a beautiful mahogany color.
Your post made me think of how much I loved the smoke of Honey Crisp & oak on my recent brisket.
