.99/lb brisket lucky me

Stopped by the local Smart and Final to do some grocery shopping. Strolled through the meat section and low and behold what did I see? Managers special Boneless Beef Brisket Whole for 99 cents a pound!

Grabbed the 3 in the display case and went straight to the register. Sure enough they rand up at .99. Asked the manager if he had more, he said he had 2 cases left.

Head home with about 135 lbs of Choice brisket to stock the freezer with.

Awesome, but why do they call it "boneless"?
Have you ever met a "bone in brisket "?

It's funny, I noticed the boneless in the name a few months ago at this store and was thinking the same thing, never heard of a bone in brisket.
 
I read this an hour ago and said to myself, "self, I did not see this post". 1 hour later and I still can't believe my eyes.. I do not blame you one bit, I would have bought every last one myself. By the way, do you have a meat grinder?? 99 cent ground brisket,,MMMMMMMMM!!!

The number corresponds to the cut of meat defined by the Institutional Meat Purchase Specifications, or IMPS. No. 120 is “boneless,” meaning that ribs one through four have been removed (Item No. 118 is just “Beef Brisket” and the bones remain intact), and the “deckle,” or the hard fat between the rib cage and the pectoralis profundus muscle, also known as the brisket flat, has been removed. Even hardcore meat geeks may sometimes mistakenly refer to the brisket point (pectoralis superficialis) as the deckle, but that’s not what IMPS cut description means here.
 
Uhhhhhhhhhhhhhhhhh:shock:. I would have bought all they had. Holy crap!!!!!! Awesome score as that is just unheard of.

Which Smart and Final? I checked the meat section at our local store and although they had a nice inventory of choice briskest they still wanted $3.49lb. Thanks.
