Costco brings it around this time of year and I love it. Remember paying $4 to $5/lb but I guess it's not a fan favorite anymore so they dropped the price down to $2.99/lb. :clap2:

Curious, why didn't you cook on the direct side of the firebox?
 
They are really good. Did one last week on the SmokeFire...the whole rack, not cut into chops. Did a nice long brine, smokeboost to 135, and sear to crust up. Really moist and tasty.
