For the "Pulled Beef" Throwdown I decided to go with a home-style comfort food…. A Cajun comfort food actually, that being a dish known as rice and gravy…. Which by the way always has a braised meat that is cooked until it is fork tender or beyond. The classic technique is to brown the meat in oil, add the “trinity” of vegetables (onion, bell pepper & celery) some garlic, hot peppers or cayenne, then deglaze with water and cook everything down until a gravy is produced and the meat is fork tender. The gravy is served over rice along with the meat.

My twist on this meal was to season the brisket with a layer of black pepper, celery seed, Montreal Steak Seasoning and Weber’s N’Orleans Seasoning. This rub combination gives me onion, garlic, red pepper and paprika. It’s like a trinity in rub form.

I smoked the brisket for 8 hours in my drum smoker.

On my BGE I built a fire and heated up my vintage "Magnalite" Cajun roaster to 300°. I started the onions, later some celery, added some Beefy Jus and once softened, added more Beefy Jus, and finally I added the brisket.

3.5 to 4 hours later it probed tender.

I removed the veggies and some pan juices to further reduce for the gravy, and then wrapped the roaster in a towel for 2.5 additional hours of holding time. A side of beans with jalapenos and a homemade roll rounded out the plate.

I’ve got a magnalite roaster just like that. Made many many many briskets in there. My other favorite additions are a 1/3cup of red wine and a tablespoon or two of fresh grated horseradish.

That does sound good. I have the 4 Quart round one too. As much as I like cooking in a CI Dutch oven, the Magnalite's are fun to cook with on an outdoor burner or my kamodo... it's just a green oven. I even fry fish and shrimp in mine. A gumbo just tastes better cooked in one. :mrgreen: WagnerWare who made some of the best American cast iron poured Magnalite from the '30's to the late 70's. You can still find them, and other manufactures are reproducing the exact design.

Looks great, you can probably clean your silver in the roaster after you wash it, seen a demonstration years ago with plain Alum pans, straight water in them and your silver jewelry , comes clean in no time, went home and throwed out a couple of classic pans, leaches something out that might not be good for a person
 
Man that looks delicious and the slices of brisket just sends it over the top for me. I have some Magnalite from my great aunts

I don't think I have real silverware beyond a teething ring, and 90° baby spoon and I want the patina on that. CocaCola has a similar reputation as a miracle cleaner. Our company mechanic used to clean battery connections in Coke.

Someone obviously has been day drinking if you think gumbo in a Magnalite is better than cast iron :wink:
