Ive got an older gentleman that helped me a lot in the beginning. He was a competitor but his main focus was fundraisers. He told me way back when to buy choice grade brisket. Swore they were “the sweet spot” of a brisket cook.

Absolutely! I rejected a prime over an amazing choice last time around. I was "that" prime guy but at the end of the day your eyes don't lie and it's ultimately a judgement call.

Thanks Marc! I've got fam getting together because everyone wants to see my bro so I shouldn't have shortage of people to eat the Q. Well maybe except one of my bro's friends that turned vegan.:twitch: I mean this guy was a hard core carnivore so I'm baffled.

Lamb shoulder. :-D Believe it or not I screw up my self and call it a leg all the time. :laugh:

Very cool. That shoulder has the shank on it! When we buy shoulders here in upside down land, we never get the shank as well.

That is one lurvely hunk of Lamb!
