Man you plan ahead Labor day is not for quite a while. Salmon smokes well, basicly most fatty fish do good.

I wouldn't try to smoke a lobster or any other type of shellfish. Probably turn out real tough. Needs to be steamed or boiled. Salmon is about the best fish for smoking.

Salmon is excellent for smoking followed by trout, but you have 4 months to plan for this

What ever it is don't let it be too white!...or you won't be able to eat the leftovers after Labor day.

Wife is going out of town and I need some ideals or recipes for smoking seafood like lobster what kinds of fish do well things along this line. I am smoking to please me this time any help is welcomed. Have to rush off to work will check in tonight.:-D

My all-time-favorite lobster recipe on the grill is by Houndog and called Dwell In The Shell. Click here and go to a previous thread. It is in post #4.

I cook a lot of shellfish at grilling temperatures using some smoke for flavor and it turns out great. Lobster and shrimp usually have a marinade of sorts even if it is as simple as olive oil, lemon juice and salt & pepper. Grilling grates, skewers and even pans on your cooker will work (especially for scallops). Oysters get cooked right in the shell.

None of these are actually "smoking" methods as we think of them. No brines and not cooked with low temperatures. Not including fish, which I love smoked (salmon is my favorite) most shellfish I have smoked have been used in dips, soups or in a pate. You have to be really careful to not over smoke or make them tough.

Fish

Smoked catfish gutted and skined leave the tail, can't get enough about a 5lb'er with some good beer......good finger food!

You have hit on one of my pet peves......

my mother studied to be a nun, as in Sister Mary Queen of the busted knuckles, but met dad during her summer off before final vows, hence no "nunship" for her. Her studies at being an english teacher still haunt me. Anyway, what you need are ideas. Ideals of those things that guide us in times of strife and turmoil. I'll get off my soapbox now. The fish sounds great!

Going to my Room Now

I'll jump on my box now.

Memorial Day is the holiday which we honor our fallen military members who died fighting for our country, our freedom and our causes. The traditional holiday is May 30 each year, but it is observed on the last Monday in May. IMHO it is the most important secular holiday we can celebrate because it honors our heroes.

Labor Day is the first Monday in September, and is a creation of the labor movement and is dedicated to the social and economic achievements of American workers. While important, IMHO it pales in comparison to Memorial Day.

Otherwise, grill up some nice Salmon, catfish or shrimp.
