Don't know about any of that, but, since you resurrected the thread, I'll take issue with this.




I believe that is misstating the case. As the cook is LnS, the margin for error is larger than it is with HnF. The "finished" IT temps will be different, but you have a wider time window with LnS.

The margin of error he refers to is in fire management/pit temp.
 
I liked the thread but you did hurt my feeling when you called me a doofus. I was just getting over all that and BAM! someone resurrected this thread and it was like tearing a scab off a wound.

BTW - those pics of Snow's BBQ brings back some great memories! One of the best trips I was ever on was my trip to Austin a few years ago. Absolutely awesome barbecue places around that part of Texas!
