Patience oh great killer of baconed eggplant. No squirrels here. The picnic is done but what we're going to do with it hasn't. There was a half cup of Tennessee sourmash that went into the injection for an 8 LB picnic so I'm sure it felt no pain in the smoker.:becky:

Can't wait to see how it turns out! :thumb:

I'm assuming you'll be drinking the rest of that sourmash, Guerry? :eyebrows:
 
Picnic Pizza!
Well. I wanted to enter the drunken Throw Down so I figured I'd try the coffee bourbon injection we do with brisket but this time in a shoulder picnic. Neither of us are bakers, I find making dough intimidating frankly, and besides, we don't have the necessary tools...

Anyway, we bought a couple ready made crusts. After the picnic was injected, it sat for a day in the fridge, then was rubbed with C-Dub's Voodoo Rub and smoked in the Cajun Bandit for, um, awhile. :mrgreen:

Cooled a bit, pulled, and ready for pie!

Yeah, Guerry forgot to mention the BBQ pizza was my idea. :drama: They did turn out really good so I'm glad he listened to me...this time!

Considering it's a SHOULDER picnic...go ahead and ham it up.:thumb:

Great looking pizzas! So I have to ask...did you both polish them off in one evening?

Um, er, well, uh...I think I put close to 1 1/2 LBs of pork on mine. It was pretty stout. We had a couple slices leftover.:mrgreen:
 
Cheesesteak Burger with Jim Beam Onions and Mushrooms

I went to the store and got some sirloin steaks on sale. I thought about using ribeye steaks, but that would be crazy. :loco:

I ground up the steaks in the trusty KA grinder, and believe it or not, I didn't par freeze my steaks. I just cut them into strips, like I always do, and ran them through.

I then used my handy-dandy burger patty press to make two thin patties. I put some provolone cheese in the middle, and pressed them together in the burger press to make one, big, cheese stuffed patty.

A sprinkle of k-salt and black pepper for seasoning...

... and on to the grill.

I then sautéed some onions and shrooms, in butter, of course. At the end, I used a shot of Jim Beam to deglaze and punch up the flavors.

Once the burger was just about done, I piled on the onions and shrooms...

...and topped it off with more provolone. I took my bakery roll, and gave it a little toast while the cheese melted.
