Kettle/Kamado Fried Chicken. Whoever came up with this was a genius! Nice crunchy shell and moist tender innards. Used thighs for this one.

There have been many posts in the past. I guess some of the newer folks may not know about it, sorry. Basically, prep your chicken for deep frying, but throw it on the grill indirect high heat.

I gave it a coat of chicken breading, into an egg wash with some heavy cream & hot sauce, then another coat into the breading. Big Joe at 375-400, cook indirect until cooked through. Delicious goodness.
 
I bought some by accident last night. Now I know what's for Sunday dinner, and anticipation---
Hope this 113~115* temp holds!
