Into the FEC for a nice low & slow cook. Good thing the FEC is insulated, it's 3* outside. More to come tomorrow...

Nice brisket. Very even thickness and it looks like it didn't need too much trimming. It should be great eating!! :pop2:
I'll check back after some shut eye.
 
Looks good! While my rectec would do it, the insulation you have is going to make a big difference at that kind of temp

Doing some flats as we speak. the steelarz play at 4.30 they went on at 10:30, cutting it close, bumped temps to 280. u can keep ur 3deg i'm running 22deg. Hope urs turn out great!!!
 
Gettin' there. I cooked at a lower temp overnight to extend the cook time a bit. And threw a fatty on for breakfast.
