Some Venison Backstrap and Dove

Had the chance to cook some of the dove I got the other day.

decided to thaw out some backstrap to go with it....this was from a white tail doe from last rifle season.

I butterflied the backstrap and gave it a quick cure of TQ for one hour...

Deboned the dove breasts, pounded and seasoned them with Pookie G Season All...(Thank you again Wickedcajun!)

rinsed the cure from the venison and layered it with the dove breasts..

gave it a bacon wrap to hold things in place...

into the drum...

hydrated some of my dried morels...

sautéed them in butter with scallions and garlic. I thought about making a sauce with the shrooms but was just too tired. I'm a slacker. lol

I have made this before and really like the way it turns out. The quick cure keeps the venison moist when I bring the IT up to cook the dove breasts.
Loved the addition of Pookie G Season All, it's really tasty stuff!

I enjoyed the meal, reminded me of why I love hunting both wild game and shrooms. :)

Looks fantastic! I don't know how you can keep coming up with great recipes though. How are the birds flying in OK? We have a good crop this year in Texas. Glad to see you using good gun safety, leaving that chamber open on the tailgate too :clap: Thanks for sharing again.:-D
 
I love how you choose to mix the different meats together. And then the morels, fantastic!:clap2:
 
Jeanie, that looks incredible! I'm especially amazed at how the bird meat is cooked yet the venison seems to be a nice medium rare. What's your target internal temperature and how long did it remain on the drum?

I'd like to experiment with rock Cornish hens and beef tenderloin. Thanks for posting!
 
Pro all the way. Is TQ Morton's tender quick? Do you season after you rinse the meat?

It must take skill to debone the birds so cleanly. Well done.
 
That's incredible! The plated picture is perfect. I'd pay a lot of $ for that plate of food.

I sure wish we could Dove hunt in NJ, but we can't. I would love to try something like this one day.
And I like the TQ trick, very nice.

Now that's living off the land! Very nicely done Jeanie - so creative and it looks absolutely delicious. I'm gonna be doing your quick cure pork chops one night this week. :hungry:
