One of those "backyard" cooks. I use what I've got.

I was able to bring in some venison during rifle season. It'll last me the year.
I cooked up a shank dinner...
cut through the meat with a knife...
cut through the bone with the Milwaukee..
The shank, rinsed and ready..
gathered some dried herbs, garlic, onions, tatoes, squash from this year's garden...
Gave the shanks a quick browning in duroc lard..
removed the shanks and sauteed the onions and garlic in the drippings..
Prepped my squash and tatoes...
Added the browned shanks back to the pot with venison stock and let er go in the drum for a few of hours..
Then added the veggies...
Ended up simmering the shanks for about 7 hours, til tender...
Venison shanks, backyard goods....... and supper was ready.
The shank was fall off the bone tender....
...and the marrow...
I schmeared the venison marrow onto a hunk of shank...
I enjoyed the meal. It reminded me of why I hunt, fish and raise a garden. Home grown, or harvested food is hard to beat. imo :grin:
