I got some poblano and anaheim peppers at a farmers market this weekend, and I have some leftover burnt ends from last Tuesday that I needed to use.

i cut the peppers in half, and chopped the burnt ends up a bit, adding a touch of chipotle tabasco. I also cut up a tomato (also from farmers market) and topped with grated cheddar and montery jack cheeses.

On the Bubba Keg with beechwood smoking away. It only took about 30 minutes at 230 until the peppers were soft and everything was ready to do. A dollop of sour cream, and a meal was had!

Finished with GA peaches cut in half, cane sugar, cinnamon and Maker's Mark whisky, grilled until warmed up nicely, topped with Hagan Daz 5 vanilla bean ice cream.

Thanx Curt .... Now you've got me drooling all over my keyboard  Those peppers look fantastic and those peaches look not to shabby from here:rolleyes: But will defer final judgement till a taste test :-D:-D:-D

Not a fan of sour cream except in Beef Stroganoff, but the peppers look good anyway. The peaches look fantastic, I gotta try them like that!

The great thing about these was that my wife doesn't eat leftovers much, but she really liked this, so it gives me something to try different ways, with pulled pork, leftover chicken, etc. I can mix onion, herbs, etc., put it all on a pepper half, and smoke it, and she may eat it finally.

we love poblanos and now have a whole new way of using them - thanks.

That plate with the sour cream on it looks great

I've done peaches similarly before, but adding the bourbon was a great kick to it. I want to try some cachaca that way, too.
