I haven't cooked much on mine yet but will be doing a turkey on Thanksgiving day in one..(the two chickens I cooked were darn good.) I usually smoke my turkey on the WSM and make an herb compound butter and rub it under the skin and it turns out great... I'm concerned the butter will burn since the skin really does get so darn crispy. Anybody ever tried it?

Used mine for the first time today and it produced some awesome results!!! I cooked a big chicken to see if I felt safe doing a turkey in it instead of my gas fryer for the big day..As good as things were. the oil fryer will get called into duty..

As for the butter question,I used a butter based injection and then peanut oil ont he outside and didn't get any burning at all..Skin was crispy but family said it didn't quite match the traditional fried turkey skin. I would think you should be fine, but may want to sacrifice some gas and a chicken to see.
