I was recently talking to a dear friend about chickenfried steaks. Couldn't get it out of my thoughts, so I had to make one!
I usually use round steak but didn't have one on hand. I did have a ribeye though.
I "gently" pounded the ribeye to the thickness I wanted..
seasoned up some flour with corn starch, granulated garlic, onion powder, cayenne, cracked black pepper, coarse salt, I think that was it.
Dredged the steak in the seasoned flour, then into the egg/milk bath.
back into the seasoned flour...
another bath...
Then into the seasoned flour with a bit of panko bread crumbs added...
I used my fingers to press the panko, seasoned flour onto the steak..
Then let it rest while I prepped the tatoes n biscuits..
I started the tatoes with onions first, also the pan of biscuits...
moved the biscuits to the top shelf and let em bake...
heated the oil for the steak...
I went with one of the big skillets. I think it's 15 1/2"....
saved some of the skillet drippin's for the gravy...
flipped my biscuits over to brown on top, and added a skillet of eggs...
I set the tatoe skillet on top, to "set" the eggs...
everything's pretty much ready.
Breakfast. Chickenfried steak, skillet gravy, fried tatoes n onions, eggs, biscuit with wild sandhill plum jelly...
poured some of the gravy over top and called er good.
I sliced a piece off that was hanging over the edge of the plate. lol It was the first thing to go.
Even though the steak was big enough to feed me for 2 days, I enjoyed it. :-D
I think it might be the best chickenfried steak I've had in awhile. lol
