A few nights a week (like a lot of us I'm sure) I put together random stuff that is leftover. Tonight I made potato chip nachos since I had 1 potato and some bbq'd chopped chicken left over. Also thew on some onion and olives.
I used the mandolin slicer to cut them thin and sprayed with pam and seasoned with salt and old bay. I baked them because I didn't feel like cleaning out the fryer and putting in new oil.
Took about 15mins at 425. They are actually pretty damn good baked. Not as good as fried, but still good.
The burnt cheese around the edges is my favorite part.
Mixed up sour cream with Stubbs spicy bbq sauce. Will be making this again .
