I made some pretty good fajitas on the Kettle and leftovers of it tonight, but they were not on par with your cook. Nice!!!
 
man I'm 50/50 with that cut. Yours looks great. For me sometimes tender and sweet others chewy as hell
 
I have one store I buy meat from that has a pretty good track record for this particular cut.
 
I like the addition of the Bok Choy. Great idea, and It looks delicious.
