Some Beef Ribs and Bacon Wrapped Corn

I love beef ribs. :-D

I drizzled these with olive oil sprinkled with kosher salt and cracked black pepper. (I like to keep them simple)

Sometimes I brush them with bacon drippings but decided to let the bacon wrapped corn baste them for me..

I had to add some spam.

sprinkled the spam with a brownsugar/cayenne mixture and spritzed with whiskey..

If you try the corn, the bacon needs to cover as much of the cob as possible. Any corn kernals uncovered will dry out...the corn under the bacon stays nice and moist.
I also rub the corn with oil and season with salt and pepper before wrapping.

Those are pretty small ears of corn Jeannie. Y'all need to come up to Wisconsin, our corn gets a lot bigger. :becky:

They use corn to make bourbon you know.

That food looked mighty fine Miss Jeannie. I would love me some beef ribs right about now. And the salt and pepper rub sounds surprisingly appealing.
