Emeril's pork/anduille burgers

I made some of Emeril's "pork/anduille" burgers the other night. grilled one up for dinner tonight with grilled red onion, smoked gouda cheese and some homemade roasted poblano mayonaisse to go with it. Put it on a grilled pumpernickel bun. yum yum

yep. Looks good. I think I might have to try some of that pablano mayo.

Is that just Emeril's sausage turned into patties? And how about some details on the poblano mayo?

go here for recipe....calls for chorizo, but i used anduille.
