So I am cooking for a tailgate tomorrow and have made my boston butt ahead of time. Right now I'm letting it sit for 1/2 hour and then am going to pull it.

Question is - should I put the container in the fridge right after pulling or should it come to rest at room temperature first. Or does it even matter?

The danger zone is 40 degrees to 140 degrees. Keep food out of this range or toss it.

Whether I'm freezing it or just putting in the fridge for the following day, I like to bag it and submerge in ice water to bring the temp down real quick.

I usually just put mine in the fridge esp for the next day. I'll have to try the ice water method sometime.

Absolutely!! Shock it in ice water, and you won't have to worry about making people quesey!!
