I was recently asked to come up with a couple of original recipe using a particular rub (please don't try and guess the rub. I would greatly appreciate your cooperation on this.). I decided to work on this project and tackle the Ground Meat Throwdown at the same time.
This is a work in progress...
Smoked a whole 1 pound chub of hamburger. I wanted some extra smokiness and the "bark."
Made up the hamburger and rice mixture and stuffed the poblanos. The whole think was smoked with cherry pellets.
Glazed with a little BBQ sauce.
The whole thing was pretty good for a first take. I'll probably have to do this three or four more times to get it where I want it.
