Prime Rib this weekend

I smoked a prime rib for some guests I had this last weekend. It was nothing fancy...but tasted pretty good. :)
Rubbed the rib roast with olive oil, sprinkled with kosher salt, cracked black pepper and some garlic...

I used my horizontal wood burner, smoked at a temperature of 315 and added a bit of hickory...

I pulled the meat off at an internal temperature of 135, foiled and let it sit for 25 minutes...

This was my plate, I tried to eat half of a slice. I know...If I got rid of the veggies I coulda tried eating a whole slice. :biggrin:
The prime rib, Au Jus, sauteed shrooms, asparagus, baked tato and salad...

I don't normally do this, but I need to make a New Years resolution:

Very nice looking rib there. Cowgirl you don't need bigger plates, you just need some sideboards.:biggrin:
