I am thinking its chuck boneless short rib. But i have never seen cut so thick. Low n slow, or Hot n fast? I have good results hot n fast but due to the thickness im thinking low n slow.
The Marbling reminds me of Prime, and there seems to be very little fat.

Thoughts?

Looks similar cut i posted a few weeks ago, that apparently i can't look up because non payed members can only go back 3 pages ( lol, what a joke ) That will make me want to donate.


I guess i'll just assume my post will be very expendable.

Since it's not that big, I'd make burnt ends out of it.

You may be right with the short rib idea. Kinda sorta does look that way.
