Wondering what type of wood yall prefer for short ribs? Hickory is too strong for me and have never tried other woods besides cherry.

I use oak primarily for beef but also throw in a few hickory sticks. To me, beef can handle such combination of smoke flavor.
 
I like milder woods as it is a longer cook time with beef ribs. I avoid mesquite and like Oak, Pecan, Hickory and most of the fruitwoods. Cherry can get the meat pretty dark (especially pork ribs) so mix with something else.
 
I use what is available... In my case I use a mix approx 60/40 pecan/mesquite... I love shorties.
