Was at the store and stopped by the sausage wall. What in tarnation is this???

The also had red fake smoked Mississippi Sausage. Is this a thing down there in Mississippi? :noidea:

That looks like the McEver smoke links or red links that are really popular in the rural areas. It has the texture and taste of a spicy hotdog.
 
That'll be a pass for me, but there's a place in Jackson MS (Big Apple Inn) that uses the stuff to make sliders. Been there for 80 years and also makes pig ear sandwiches. Had I known, I would have probably stopped in when I was in Jackson last year.

Get the hot links. Grill or bake until very dark (black) andlet them bust open to know they are ready. Put on a a bun with bbq sauce. Called red hots.
