so , I had a prime packer chilling in the fridge since mid February. I finally have time to use it.

Yesterday I took it out and gave it the smell test.

It didn't give me the KO smell , more of an aged cheddar funk to it. after rinsing it off , it still had a slight aged funk but definitely not over powering.

my main question is to those that wet age is . I just wrapped it a bit ago as it was around 170ish . I could still smell that wet aged funk . Is that normal ?
