So, the Wife's birthday is on Valentine's Day. Trust me, it's not any easier. Two cards, two gifts, luckily, only one dinner. I will say, this was the best birthday dinner I ever cooked for her.
I was at HEB several weeks back and saw 8 oz lobster tails on sale for $12. Grabbed a couple that were still frozen, vacuum sealed them and into the freezer. On another trip, I found these "Choice" steaks.
I asked a buddy in the butcher shop and he said they were Prime's that didn't sell yesterday, so they marked them as Choice for quick sale. I took all four that they had and these two ended up being for the birthday dinner.
Thawed everything out the day before and got everything ready to go on the WSCG. First the tails:
Cut the top of the shells off, gently loosened the meat, a little olive oil and a heavy sprinkle of Slap Ya Mama.
Had to have a veggie, so decided on Bacon Wrapped Asparagus. Clean and trimmed, a little olive oil, and seasoned with Lemon Pepper, Season Salt, and Black Pepper. Wrapped three per bundle in thin sliced bacon.
Tails and greens on first:
Steaks joined them soon after:
Pulled the tails off at 135* and let them rest.
Bacon started to crisp up, so pulled the asparagus:
Time to sear the steaks:
Steaks done:
Plated:

Like I said, best birthday cook I've done for her. My steak was a strip, I prefer Ribeye, but it was tender and delicious. The lobster was cooked perfectly. I even like the ruffage, but that may be because of the bacon...
