Had a chance to try it out tonight. Since Pulled beef is the Topic this month, i thought, might as well do my favorite dish. Beef Stroganoff. So heres my take. I put a nice sear on the chuck roast, added some pellets in tinfoil for some extra smokey flavor, then lowered it down to 250F and wrapped in foil with some beef stock.
