Good afternoon folks,
Just wondering if anyone on here has used beer in their bacon cure? Our local brewery, LongWoodenSpoon, has a great hatch green chili porter and I want to use it in my cure. I love the flavor. Just not sure how much to use per pound. Any suggestions or know how?
 
Personally I think it's a great idea, but I would have personal concerns about the flavor of stale beer after the 5 to 7 days cure for myself.


Let us know how it turns out.... really interested in the outcome of your experiment.
