Today I finally had time to try out my UDS. I put on some loin back ribs, rubbed with Mean Deans. The drum held temps well, it took longer than I thought to get there and I had plenty of lump left after five hours. The ribs turned out great, some of the best I have done!! Attached are some pics of the drum and finished product.

Any reason you put charcoal in ring instead of a pile?

What he said. To not use as much? Light one side and the burn travels around the ring like the baskets with baffles? Inquiring minds want to know.

Any reason you put charcoal in ring instead of a pile?

The charcoal around the ring was just left over from my initial burn in the larger fire box, I was just to lazy to empty it out. I used the smaller fire box for the ribs, its 7 inches by 8 inches tall. I had about one third of it left after a fire hour cook.
