Put a couple chickens in the UDS, along with a couple pork loins. The porkloins were for dinner that night, the chickens were for the weekend, but at the time, I wasn't sure what they'd get used for.

Well, they got used for Chicken pot pies. I don't know if you've tried it, but they are great prepared that way. Add to that, using the skin, carcass and other bits to make some stock for the pies.

Added to the chicken bits were the usual carrots-onion-celery-garlic, along with some aromatic garden herbs, rosemary, thyme, and oregano. That simmered for several hours.

Some oven roasted vegetables, including red potato, brussel sprouts, and mushrooms.

Made 2 pies, turned out real good. Good cold weather comfort food!

Pork loin turned out good too. Cooks pretty quick, so chickens are a good addition to the cook.

tossed a little olive oil on them, some sea salt, and gave them about 20 minutes at 350. Just until the carrots start to soften. The oven will finish them off.
