Man was this tasty..

Started off this morning making my sausage gravy. Which I must say is so good

4 cups whole milk
1 breakfast sausage
1/3 cup flour
1 TBS wshire
1/2 ts seasonall
1/2ts black pepper
1 onion

First step is to brown the sausage and onion. Work in 2 batches

Do not stir right away! Let that sausage get all good and brown and stick to the pan. That's where the best flavor is picked up
This is when it was all done.

Next is to sprinkle on the flour. I like to go slow with this step. Usually 3 sprinkles.

Keep cooking it on low to kill that flour taste. When it's all mixed the sausage should look fairly dry

Next is the milk, season all and pepper. Stirring pretty often

Bring to simmer and let thicken. I like to add the wshire sauce halfway through

Looking good

Made some potatoes on the blackstone

And breakfast was served

Full belly. Then comes part 2
Started with a chuckle

Smoked on the yoder for 3hrs

Then added one can of beef broth and some wshire sauce and foiled. Cooked for another 3hrs until it was falling apart. I was just going for some flavorful drippings.

You can also see the bacon I was smoking away. For yes bacon grease
Juice from the chuckie

Next was to make my gravy. Used the bacon grease along with butter and flour

I like a dark roux

Added the drippings/broth back in

Then the darn gravy wouldn't thicken!! I was not happy. Either way the finished product was delicious. Gravy had really nice flavor from the chuckie and the bacon grease
Made some fries

And bam. One had closest thing to cheese curds I could find along with the brown gravy. Other side had warmed up sausage gravy.

Hope you enjoy as much as I did!
