I wanted to get my 18.5 kettle in for some slow action so I decided to reverse sear a tri-tip for some yummy tacos! They were outstanding as always. I coated the tri-tip with a little olive oil then rubbed with Oak Ridge Santa Maria (great stuff!).
The kettle settled in at about 305 for the slow cook. I was hoping for about 275 but I started the 18.5 with as many coals as I do my 22.5, so yeah its gonna get hotter. :loco:

Took the IT to about 115 then removed from the grill, pulled my fire brick towards the middle of the grill to get a bigger sear area and stoked the fire. Within 2-3 min I was searing.
Grilled some tortillas for the tacos. Grilled tortillas are great. I cant eat them any other way now!
I cooked to about 130-135 IT. I like my beef medium! Check this out:
Now for the finale!! The taco shot! The taco was built with a grilled tortilla, small dollop of sour cream spread across the tortilla, several pieces of sliced Tri-tip, avocado slices, jalepneo, little broccoli slaw, and salsa....This was delicious!
