So I picked up a pack of tri tips at Costco yesterday and figured I'd throw one on the pellet smoker today. Haven't had tri tip in quite a while, needed my fix. Figured I'd go simple, just salt, onion, and garlic.
On the smoker with some taters and ABT's.
I cooked it to about 125* IT and pulled it for a short rest. Fired up the gasser to 500* to do a reverse sear. A few minutes on each side and pulled it off.
Sliced and plated.
