Tri Tip with a splash of Worcestershire, layer of Kosmos Texas Beef, and a layer of Oakridge Secret Weapon. Smoker until 110, seared on PK while garlic herb Parmesan potatoes finished.
Looks good. Do you notice much of a difference when you sear it or not? I used to sear tritip but when eating the surface area is so small that I am not sure it changes the texture much. Got lazy and stopped searing.
