I'm looking to add a gasket to seal up to my Traeger 34 Pro Series. My question is, should I only do the lid, or is it necessary to do the lid and the body?

Adding a gasket might hurt the hinges on the door, you are putting an additional layer between the door and body so you'll need to raise the hinges with some shims.

You should only need one layer of gasket. Whether you apply it to the door or the body is up to you.
