Had a top sirloin in the freezer that kept saying "Smoke me....." so I thawed it out no wanted to try something different. Saw a marinade recipe for sirloin steaks and thought it should work on a roast. It's just a big steak anyway. Modified the marinade with what I had, wild mushroom infused EVOO, Worchestershire sauce and lemon infused white balsamic vinegar. Sat in the fridge for a few hours while I drained and refilled a water bed, then got my CI Dutch oven out.
Chopped up some onions, bell peppers and some garlic cloves. Seasoned the meat with some garlic powder, sea salt, pepper and some fresh rosemary, thyme and basil from the herb garden and seared the meat, removed it and sautéed the veggies a bit.
Beef back n with some beef broth and red wine to get happy for awhile. Cut up some small white taters and shrooms to add in. Gonna let it go three hours or so and check it. Hopefully it'll turn out well.
