I should know this, but I really don’t.

On a weber summit to control the temperature do I move the bottom vent or do I move the top vent?
Basically, what does what?
Thanks

Thank you. That’s exactly my experience
I’ve just read so much about leaving the top open wide
When I do that the temp takes off to the races!
I keep the bottom vent in the smoking zone and use the top to control
For 225* temp I have the top mostly closed

On any cooking / smoking vessel, I control the temp with the inlet. The outlet is usually wide open but at times closed slightly. If the inlet is open too much and you try to hold the fire back with the outlet, you can create a smoldering somewhat rancid smoke.

Just my opinion and what I do. If something else works for you - Great. Smoke on!

For my summit Kamado I set the bottom vent to smoke and control from the top. If I’m really having a difficult time keeping the temps down with the top I’ll tap the bottom a touch to close it, but if I’m patient and slowly get the grill up to temp I don’t have that issue.
