The weather here has been almost constant cold rain,last time I put meat over fire was Thanksgiving! Found some good looking flank at the store and decided it was time for tacos!
Made a marinade with cilantro,garlic,lime juice,oil,soy,little sugar,cumin. Threw it all in the vacu- sealer and let set about 12 hours.
Got the kettle set up indirect running 400 or so. Put the flank on, covered and let it go 20 minutes. Temp was 125 switched it to direct for 3 minutes a side. Got some color. So time to tent an rest.
Turned out tasty and satisfied the need to fire some meat!
