Smoked on the UDS for about 2 hours at 250. Very tasty!! The big one was done with Marvelous Marvins and the little one with the spices I use on my steaks. Leftovers tonight. Oh got a new slicing knife, very nice so far.

Next time that you cook 2 tri tips try an experiment:

Slice one tri tip exactly as you have in this picture on one tri tip

Slice the other tri tip exactly perpendicular to the grain

Try the different slicing techniques for yourself---I think that you will be amazed.
It looks like you are doing everything awesome----try the slicing experiment and judge for yourself. Long strands of grain have strength--that strength converts to toughness----jerky is sliced parallel to the grain. The object is to getthe shortest possible grain in a slice. If that tri tip was tender cut like that-----it will melt in your mouth cut across the grain
 
Hey Chuckwagon I still got some left, will the experiment work on cold tri-tip??
