Pork loin on sale $198 per pound. 7 pounder.
Started it around 7:30AM Sat. morn

After soaking the beans overnight, they went into the cast iron kettle and
over the fire around 9:00AM with some onions green pepper jalapeño pepper from the garden and homemade BBQ sauce.

It all came together around 6:00 PM then back on the fire to simmer till
around 9:00PM

I don't know what happened to that big chunk missing from the roast, must have fallen in my mouth by accident LOL.

Sorry, no pics of the day after, the way everyone attacked it I had to throw
down the camera and fight my way in to get one bowl full and a sammy.

Mmmm.... looks delicious, and I love the looks of your yard and cooker too!!
 
I have seen pork loin packed in that fashion. The whole long loin is almost cut in half, then folded over. Easier to put in the meat case. It also can be tied to be a more consistent thickness for roasting, as a whole loin tapers front to back.
