Forgot to mention...Paul made a griddle plate for me to go in the warmer...this thing is HEAVY DUTY @ 40lbs!

Congratulations J! I know you've been waiting a long time for your pit. It's a great looking pit I must say. But unlike most of these guys I think the OU logo is what sets it off!
I saw Paul post a pic a few weeks ago with a pit he was working on that had an OU logo on it (can't remember the topic but I think it was in the woodpile). I wondered if it was yours and after seeing your pic's I'm certain it was.
Wish I could help with your questions but I know nothing about stick burners. I'm sure there's someone here that will have a PhD in smoking on one that will be able to get you right where you want. It's why I love this place.

Nice rig! You can always throw some charcoal is the warmer as well as crack the damper into the firebox that should provide both heat and smoke to the warmer.
