Picked up some beef ribs at the HEB, peeled the silver stuff off ...

Seasoned and ready to cook I used mesquite and oak for my smoke wood

Two hours later ... This turned out great but I should have gone lighter on the rub - beef ribs don't need much help on the grill.
 
Was the total cook for the beef ribs only two hours? At what temp? That seems like a very short cook for beef ribs.
 
I usually go 4-6 hours with beef ribs. and, i might have to wrap in foil @ the 2-3 hour mark. That's to make em pull-tender.:}
