Boston Butts Cook Log

1) Rubbed with Cherry Rub and injected with peach nectar at 6:00 am.

2) Let pork butts (30 lbs.) rest and sweat with the rub till 9:00 am.

3) Put on smoker at 275 F at 9:06 am. (no water pan this time)

4) First Sprits at 10:06 am and every hour for the next 3 hours
Temp of butts at this time were @ Larger one 69 F smaller one 92 F

5) Second Sprits @ 11:07 am 2 hours into cook
Temp of butts at this time were @ Larger one 114 F smaller one 131 F

6) Third Sprits @ 12:06 pm. 3 hours into cook
Temp @ this Time were @ Larger one 140 F smaller one 138 F

7) Fourth Sprits @ 1:06 pm 4 hours into cook
Temp @ this Time were @ Larger one 165 F smaller 164 F

8) Took off smoker @ 1:37 pm and placed in pan with Peach Nectar and covered with foil
Temp @ this Time were @ Larger one 165 F smaller 164 F

9) Six hours into the cook @ 2:46 pm
Temp @ this Time were @ Larger one 189 F smaller 190 F

10) Pulled off smoker @ 3:06 pm Larger one 199 F Smaller 200 F

11) Sitting in house on counter to rest covered for 30 minutes before pulling. GOOD GOD ALMOST DONE !!!!

I AM DONE @ 5:25 PM !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Thank for the all the nice comments on this cook. The party was a big hit with the family and friends, also a surprise visit from my daughter in-law's cousins that came in from North Carolina to help out with the move and visit. They said the pulled pork was worth the trip to long island. Plenty of food leftover for supper on Monday but the pork lasted only 1 1/2 hours along with 38oz bottle of my peach bbq sauce. Going to miss my grand children oldest one made me promises to come down
In October to cook her pulled pork and ribs, said she will make daddy buy a smoker for me to cook on GOD I love that 15 year old to death.
