Chicken Thighs on the menu tonight. I didn't want to make the same old Shawarma, Kettle Fried chicken, or chicken using one of my standard rubs. I wanted something different, something Asian inspired. I pulled out a number of ingredients that I thought would go well together and came up with a Thai Chili Sauce Marinade. As I was putting this together I checked online for guidance and found the almost identical marinade on tablespoon.com. Go figure.

Thai Sweet Chili Sauce
Garlic
Five Spice powder
Brown Sugar
Ground Ginger
Sesame Oil

The marinade (sorry, took the pic after brushing most of it on the chicken) -

The taste was quite good. I do wish I had grilled this two-zone rather than fully indirect so I could have crisped the skin at some point, but it was still excellent. All in all, a flavorful marinade was the result of playing food chemist this morning. Amazingly, I wrote it down as I was mixing it so I can make it again.

Yum chicken and skrimps. You wrote down the marinate...with age comes wisdom :-D Great looking meal. Did a quick omelet on mine this moring with very minimal clean up compare to the stove. Thanks again for tipping me over the edge on getting a blackstone
