My son graduated from High School last night and we are having a nice family feast today.
Grass fed beef fajitas marinated in aqua negra (pineapple-soy basically Ninfas-Pappasitos-El Tiempo stock Houston style fajita marinade)
Tex mex cheese enchiladas (red gravy, blend of cheddar and American cheese)
Puerco costillos (pork ribs) glazed with chili-lime-honey
Diced avocado tostadas
Homemade Spanish rice and refried beans
Also have a couple Wagyu outside skirt steaks that I will grill off and serve with chimichurri
Cilantro and onions and fresh salsa rojo on the side
Meat on marinade, ribs on and enchies ready for the oven (put them together yesterday and fried up some tostada shells
