I have been at Tim's (groundhog66) house several times and he has always made wings (along with a lot of other stuff). His wings have always been over the top good. So, after Oakpit (The other Tim) posted this write up(http://greenleafbbq.wordpress.com/2...the-planet/?blogsub=confirming#subscribe-blog) on his not so secret method, I thought I would give it a shot.
These are whole wings with the tips removed. Not party wings.
I deviated in that I marinated the wings in a Teriyaki sauce and then made my own mop sauce consisting of:
24 oz of a great beer
3/4 cup brown sugar
5+T soy sauce
1 tsp garlic powder
4+T Louisiana hot sauce
Put all the mop ingredients in a sauce pan and reduce by 30 percent.
Put the wings on a kettle indirect at 325 in a pile. Every 30 minutes, knock down the pile, mop and restack. The wings will be done in 3 hours.
Try these, they are very good!
Keep em stacked up.
The teriyaki darkens up, but these are perfect. They will get sticky on the outside when they are done.
